Bacon Gnocchi

Ingredients:
Prepare gnocchi according to package directions. Drain reserving 1/4 cup of pasta water.
Brown bacon in skillet over medium heat until crisp, about 5 minutes. Remove bacon from skillet and drain on paper towel lined plate.
Add onion to bacon drippings in skillet and sauté until softened, 3 minutes. Stir gnocchi and bacon in with onion, cook until heated through about 1-2 minutes. Remove skillet form heat stir in reserved pasta water and parsley, season with salt and pepper, before serving sprinkle with Parmesan cheese.

- 1/4 cup shredded Parmesan cheese
- 1 tbsp fresh minced parsley
- Salt and pepper to taste
